Review: Of the three Asian noodle boxes that Trader Joe’s sells, the Peanut Satay Noodle Box is my least favorite. It is also an excellent affordable vegan lunch to bring with you to lunch or keep around at home for the times you don’t feel like cooking. Like the Kung Pao, the noodles can get a bit crunchy and dry if microwaved too long. Unlike the Kung Pao, the peanut sauce isn’t spicy enough for me. Though rich and caramel in flavor, the heat could stand to be intensified and the peanut pieces could stand to be a bit larger.

Never mind. Just threw the sauce and noodles in a sauce pan (with nothing extra) and heated it up. It did taste good, but everyone is right…you do need to add something to it. So, I added broccoli and carrots. However, peanuts would have made it twice as good. I love Thai noodles with peanut sauce and peanuts.
